      <image:caption>10 Cups plain popped popcorn 1 cup whole almonds 1 cup of butter ½ cup of maple syrup, grade rich amber 2/3 brown sugar 2/3 white sugar 1 tsp vanilla ½ tsp of baking soda   Roast nuts in oven.  Combine popcorn and nuts in a large roasting pan  In a medium sauce pan, blend the butter, sugars and syrup over medium heat, stirring until completely melted.  Once melted, discontinue stirring and insert candy thermometer.  Cook the caramel mixture until it reaches 280 degrees F (140C).  Remove caramel from heat and add vanilla and baking soda, stir rapidly making sure it becomes well blended.  Pour of popcorn and nut mixture immediately. With a large wooden spoon, quickly stir popcorn until it is completely covered evenly. WARINING: Do not let caramel touch your hands it is extremely HOT!!!!!!!   Transfer the popcorn onto baking sheets. To cool candy quickly, place the baking sheets in the refrigerator. When cool, the candy should easily break apart into pieces.       <image:caption>Our beautiful sugarhouse is 2,500 square feet and nestled 2 miles out into the woods on our 570 acre farm. Once the ground beings to thaw in early spring the trees start to release their sap. The sap flows into our tubing system and runs directly into our sugarhouse. It generally takes 43 gallons of sap to make 1 gallon of finished maple syrup. Then the race to make as much maple syrup begins. This is also the time in which we hot fill our freshly dumped bourbon barrels to begin the aging process of our best selling bourbon barrel aged maple syrup. Depending on Mother Nature our season is generally short lasting just a few weeks a year. Once the weather warms up and the sugar maples begin to bud the season is over.</image:caption>

      <image:caption>In 2012 Austin Felis II had a vision of starting a different kind of maple syrup company. Growing up in Stowe, VT he would come to the small town of Dorset to vacation, years later after going to college and living in Boston he decided to move back to Vermont. Using his background in engineering, business, as well as mechanics he started teaching himself all the inns and outs of sugar making, he hung a few lines, tapped some trees and instantly he knew that he wanted to make this a full time profession. In 2013 Austin and wife Lauren moved to Dorset, VT full time to pursue the maple syrup business and raise their growing family. With Laurens background in photography she handles the marketing side of the business. The Dorset Maple Reserves mission has always been to honor the tradition of sugar making but also add a modern twist on how people use this magnificent condiment, we are constantly coming up with new ways to use our maple syrup to break the stigma of using it just for breakfast. We developed our bourbon barrel aged maple syrup back in 2014 and then our smoked &amp; spicy in 2015. These maple syrups are meant for the creative cook and great in anything from cocktails, sauces, cooking and more. From tapping to bottling we do it all. We truly hope that customers enjoy our products as much as we love making them!</image:caption>

      <image:caption>With over 140 miles of tubing in our woods and over 11,000 taps, we start our work in December. Work begins with clearing the lines from fallen trees and repair damage from animals biting the lines over the last few months. The next phase is to hand tap each tree and connect to the main lines which feed directly into our sugarhouse. The sap is collected into a 9,000 gallon holding tank and then the fun really begins.</image:caption>

      <image:caption>1 bag of mini croissants 6 Eggs 1 1/2 cups of milk Pinch of sea salt 1/4 cup of maple syrup 2/3 cup of raisins 1 tsp of cinnamon In a large mixing bowl combine milk, eggs, salt, maple syrup, 1/2 of the raisins , and cinnamon. Cut your mini croissants into quarters and place evenly in a 9x13 inch baking dish. Pour the wet mixture over your croissants evenly. Gently mix to coat until all of the croissants are completely soaked with the wet mixture. Sprinkle with the rest of the raisins and an additional sprinkle of cinnamon. Cover with tin foil and set in the fridge over night. Preheat your oven to 365 degrees. Bake for a total of 50-55 minutes. For the first 25 minutes bake covered with tin foil. Then remove the tin foil and bake the remaining time uncovered until golden brown and all of the liquid mixture has thickened and cooked through. Once out of the oven let sit for at least 5 minutes before cutting and serving.</image:caption>
